For the love of waffles

I love breakfast food. I mean, honestly, I could eat it for every meal of the day and then some. 
Waffles are usually my item of choice.
I try to eat a fairly "gluten/grain free" diet (give or take a few meals) but one of my most favorite waffles recipes is gluten AND (added) sugar free. It's divine.  

Gluten Free Waffles
1 1/2 cups of Bob's Red Mill GF baking flour
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp Stevia 
1 tbsp natural applesauce 
3/4 cup unsweetened vanilla almond milk 
4 eggs (separated)
1 tsp vanilla extract (or maple extract)
*I like to add a sprinkle of cinnamon 

Mix dry ingredients into a bowl. 

In a separate bowl, whip the egg whites with the vanilla (or maple) until it thickens. (Try adding in some xantham gum)

Add milk, egg yolk and applesauce to dry mix. Then fold the egg white mix in. Spray waffle iron with coconut oil spray and let set.
Once done, top with fresh fruit and a drizzle of raw honey and enjoy!
